From a chilled out day in the garden to a summer party with friends, homemade cocktails are a must at this time of the year. Here are some of our favourite and easy to make cocktails that you won’t be able to say no to this summer.
1. RASPBERRY LIMONCELLO COOLER
This drink is your classic bubbly prosecco with a summer twist. The combination of limoncello and raspberries gives your standard champagne style beverage a sweet yet zesty kick.
INGREDIENTS: 6 Mint leaves, 1 cup Raspberries (frozen), 1 cup Limoncello liqueur, 3 cups Prosecco
Combine the following ingredients in a small jug with ice.
2. BLACKBERRY WHISKEY LEMONADE
This fusion of rich berry syrup and dark whiskey creates a bitter sweet touch along with the earthiness of the rosemary. The lemon juice base also compliments each flavour to create a cocktail that is uniquely tasty.
INGREDIENTS for the Blackberry Syrup: 1 cup fresh blackberries,½ cup sugar
Put the blackberries and sugar in a small saucepan over medium heat for approx. 30mins. Strain the syrup to get rid of excess pulp.
INGREDIENTS: For the Whiskey Lemonade: 200ml whiskey, 200ml lemon juice or lemonade, 1 large rosemary sprig, 170 blackberry syrup
Add the rest of the ingredients to the blackberry syrup and serve with ice and rosemary.
3. WATERMELON MOJITO
This fusion of thirst quenching flavours are a match made in heaven for this rum based cocktail. This is a perfect twist on a well-loved cocktail which is usually paired with a hot beach abroad.
INGREDIENTS: 20 mint leaves, 2 tablespoons superfine sugar, ½ cup freshly squeezed lime juice, ¾ cup light rum, 6 ounces seedless watermelon, pureed
Use a large shaker to mix the mint, sugar and ¼ cup of the lime juice. Fill the shaker with ice and then add the rum, watermelon puree and the remaining ¼ cup of lime juice; shake well. Then pour into glasses over ice.
4. PEACH & GINGER SANGRIA
This wine based pitcher cocktail is the perfect fruity refresher which can be easily served from day to night in the warm summer months. The sweet peaches mixed with ginger gives a kick to a classic wine mixed drink.
INGREDIENTS: 2 large fresh yellow peaches (sliced), 1/4 cup sugar
Put the peaches and sugar into a pan to simmer. Add the syrup and extra slices of peach to a jug.
3/4 cup peach liqueur or peach schnapps, 1 bottle white wine, 1 litre ginger ale, chilled
Add the rest of the ingredients to the peach syrup and pour into the jug and add ice.
5. CUCUMBER MARGARITA
This tequila based cocktail is definitely the strongest of our top 5 but arguably the most refreshing. With infusions of cool cucumber and lime, this drink will pick you up into the summer mood.
INGREDIENTS: 2 1/2 ounces Cucumber-Infused Tequila
Fill a cocktail shaker with ice. Add the Cucumber-Infused Tequila, lime juice and syrup and shake until well chilled. Strain the cocktail into the rimmed glass and garnish with the cucumber slice.
1 ounce fresh lime juice, 1 ounce simple syrup
To make the syrup, combine equal parts sugar and water in a small saucepan and bring to a boil; stir until the sugar dissolves. Let the syrup cool.
Salt, for rimming the glass
Wet the rim of a glass and dip it in salt. Let stand until dry. Fill the glass with ice.
